Creamy Pumpkin Soup Recipe

This healthy pumpkin soup recipe is rich and creamy and packed with flavor!  It’s perfect for school lunches or an easy weeknight meal.  One of my favorite fall recipes!

Back to school has arrived and fall is in the air!  It’s always a bit of an adjustment to transition from those lazy summer evenings to busy school nights filled with homework and sports activities.  Especially for getting dinner on the table! I’m always on the lookout for quick and easy weeknight meals that the whole family enjoys and I’ve been trying to get a little more creative with our dinner options lately.  I’m happy to say that this pumpkin soup recipe was a big hit with everyone {with the exception of the celery that had to be picked out by my oldest son!}.

Pumpkin Soup Recipe

I must admit, I never really thought of using pumpkin for cooking, BUT, this pumpkin soup recipe has totally converted me. It’s so tasty and just what I seem to be craving on those cool fall days.  It takes less than 10 minutes to prep so it’s perfect for busy weeknight dinners when your scrambling around.  I’ll often whip up a double batch and save the leftovers for lunches.  You can serve it as a side or just pair it with some hearty bread for a full meal.  This recipe will make 10 servings if using as a side or about 4-5 servings if using as a meal.

Pumpkin Soup

This creamy pumpkin soup is filled with delicious flavours of fall and makes a nice, hearty meal on those cool fall days.

Cook Time 20 minutes

Ingredients

  • 2 tbsp olive oil
  • 1 leek sliced
  • 2 celery stalks
  • 1 large potato diced
  • 2 tsp curry powder
  • 6 cups vegetable broth
  • 1 can pumpkin 796 mL
  • 1 can 2% evaporated milk 350 mL
  • 1 tsp pepper
  • salt and pepper to taste
  • croutons

Instructions

  1. Heat oil in a large pot over medium heat. Saute the leek and celery for 3-4 minutes until soft.
  2. Add diced potato, vegetable stock, curry powder, pepper, and pumpkin. Stir well and bring to a boil. Reduce the heat to simmer and cover. Cook for 14-15 minutes or until the potatoes are tender.
  3. Stir in milk and cook until heated.
  4. Serve with salt and pepper to taste and top with croutons.

Recipe Notes

This recipe should make about 10 servings if using as a side or starter and 4-5 servings if using as a main course.

Health Benefits of Pumpkin

While I love all of the pumpkin desserts and other treats that come out at this time of year, they’re not always so good for the waistline.  This creamy pumpkin soup, however, delivers all of those delicious fall flavors without the fat and calories. Pumpkin is chock full of antioxidents, minerals, and vitamins, as well as being high in fiber and low in calories. It’s kind of the perfect superfood!

This soup is really hearty and flavorful and worked well for a dinner meal paired with some easy Irish soda bread.  I’ll be whipping up another batch this weekend to take to work/school for lunches.  There’s nothing better than a warm, tasty soup on these cool fall days that we’ve been having! I hope you give it a try!  It might even convert some of those non-pumpkin lovers! 🙂

      Thanks Amy! I got them a couple of years ago at Superstore. {It’s a Canadian grocery store if you’re not from here.} I’ve seen similar ones at Williams Sonoma and Pier 1 – but they are a little pricier.
